Who knew??? Pancakes made with a muffin mix!
We love muffins at my house. They are a quick, tasty treat for anytime. Our favorite flavors are chocolate chip and wild berry. So I thought it was pretty cool to run across this recipe using a muffin mix to make pancakes. Now we have a new quick and easy way to get some chocolate chip pancakes without having to drive to Gatlinburg, TN. (That’s where the best pancakes are – The Pancake Pantry!)
Enjoy!
| 1 | pouch Betty Crocker® triple berry muffin mix |
| 1 | tablespoon Gold Medal® all-purpose flour |
| 2/3 | cup water |
| 2 | tablespoons vegetable oil |
| 1 | egg |
| Powdered sugar or Pancake syrup, if desired |
| 1. | Heat griddle or skillet over medium heat or electric griddle to 300ºF (grease if necessary). |
| 2. | Stir all ingredients except powdered sugar until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle. |
| 3. | Cook about 3 minutes on each side, turning once, until golden (watch closely–pancakes brown quickly). Sprinkle with powdered sugar or serve with syrup. |
| (Total time will vary; cook or bake time is per batch.) | |
| High Altitude (3500-6500 ft) If using electric griddle, heat to 375ºF. Omit oil. | |

When are we going to go to Gatlinburg?
Hopefully sometime before school starts.
Hey what about me!! I want to go to G-Berg too!!
Jen, of course you can go to G-berg, too! We’d like to go before everyone gets back in school. We’ll keep you posted – Dad and I need to check our schedules at work. I’ll be in Florida sometime in August and Emily starts school the first week of August.
